Vegan Chocolate Brownies

These vegan chocolate brownies are beyond rich and are naturally sweetened! These are a treat, but I use coconut sugar due to its lower glycemic index!



Method

Ingredient

  • 200g of your favourite vegan dark chocolate. I used coconut sugar sweetened chocolate

  • 170g vegan butter

  • 85g plain flour

  • 60g cacao powder

  • 200g-275g coconut sugar (will slightly change the texture of the brownie depending on how much you use, less sugar will yield a softer brownie) - I used 2006

  • 1tsp baking powder

  • 150ml soya/almond/oat milk

Method

  • Preheat oven to 175 degrees

  • Line 8x8 pan with greaseproof paper

  • Melt chocolate and butter together

  • In a medium sized bowl, mix all dry ingredients

  • Pour melted chocolate into the medium bowl

  • Add soya milk and mix until combined

  • Bake for 35 minutes or until a toothpick comes out with a few moist crumbs on!
