These red berry crumble bars are the best way to make a healthy snack, perfect for any time of the day! With NO refined sugar or flour, you can guarantee you will love these!
They are essentially your typical berry crumble, but even better because they are in bar form - making them an amazing snack to pick up whenever!
They are naturally gluten free as they use almond flour and oat flour. Oat flour is easy to make, just blend your oats, and if you can't find almond flour, feel free to use ground almonds - these will work just as well, but will have a nuttier flavour and texture!

Ingredients
Base
65g oats
130g oat flour/plain flour/wholemeal flour
145g almond flour/ground almonds
pinch of salt
11og melted coconut oil/unsalted butter
110g liquid sweetener (I used honey)
splash of vanilla or almond extract.
Filling
350g strawberries
100g raspberries
60g liquid sweetener (I used honey)
1 tbsp cornflour - this thickens the filling
1 tbsp lemon juice - will enhance the flavour
Method
Preheat oven to 175 degrees.
Grease and line an 8x8 inch square baking tray.
In a medium bowl, mix together all dry ingredients. Once combined, add in melted oil/butter, honey and extract.
Stir until the dough is combined. This should look slightly wetter than your usual crumble mixture.
Place 2/3 of the dough into the baking pan and flatten.
Bake this for 10-12 minutes - the dough will still be relatively soft but will have slightly darker edges.
Leave to the side.
In a saucepan, place all ingredients over a medium heat, for around 3 minutes. Let this simmer, stirring every so often.
Once the 3 minutes is up, lower the heat down, and simmer for a further 5 minutes.
Your filling should be thicker - you can test this by moving your spoon around the bottom of the pan - you will be able to see the pan, as the liquid becomes more viscous.
Now, pour this mixture over the top of the base you have just baked.
Take the last third of the crumble mixture and place over the top.
Bake for a further 40 minutes. The filling will be bubbling, and the crumble will be golden.
Important: You must let this set in the fridge (as hard as it sounds) for around 2 hours. Once it has set, it is much easier to slice and you can then warm up your slice if you desire!
Notes
You can definitely try this with other fruit, such as blueberries, cherries, or blackberries.
To make oat flour, just blend oats.
You can sub honey for maple syrup or agave syrup.
These will keep nicely in the fridge for up to 5 days, or in the freezer in an airtight container for a month.
